Creamy homemade shrikhand loaded with chopped almonds and pistachios.
ALMOND AND PISTACHIO SHRIKHAND
Ingredients
¼ cup chopped almonds
¼ cup chopped pistachios + for garnishing
½ cup hung yogurt
½ cup milk
A few saffron strands
¼ cup castor sugar
½ teaspoon rose water
½ cup fresh cream
Method
1. Heat milk in a non-stick pan. Add saffron, 3 tablespoons castor sugar, mix and cook till the sugar melts. Remove from heat and set aside.
2. Mix together hung yogurt, pistachios, almonds, rose water, remaining castor sugar and milk mixture. Mix till well incorporated. Transfer to a jar and refrigerate for 1 hour.
3. Garnish with pistachios and serve chilled with puris.
