QUICK CHCIKEN PULAO As the name suggests this is a quick and very tasty rice preparation with juicy and flavourful chicken. Ingredients 400 grams chicken cut into 1 inch pieces on the bone 1½ cups Daawat Pulav Basmati Rice 2½ tbsps ghee 1 tsp oil ½ inch cinnamon stick 2-3 green cardamoms 5-6 black peppercorns 5-6 cloves 2-3 green chillies slit 1inch ginger cut into thin strips 1 medium onion sliced 1 cup fresh tomato puree Salt to taste 1½ tsp red chilli powder ¼ tsp turmeric powder 1½ tsp coriander powder 2 tsps garam masala powder ¼ cup yogurt 3 tbsps chopped fresh coriander leaves 2 cups chicken stock Fresh coriander sprig for garnish Burned garlic raita to serve Method 1. Wash Daawat Pulav Basmati Rice with sufficient water for 2-3 times. Add fresh water soak for 20 minutes and drain. 2. Heat 1½ tbsps ghee and oil in a pan. Add chicken and sauté for 2-3 minutes and transfer on a plate. 3. Add remaining ghee in the same pan add cinnamon stick green cardamoms black peppercorns cloves green chillies ginger strips and onion and sauté for a translucent. 4. Add tomato puree sauté for a minute and add salt mix and cook for 2-3 minutes. Add red chilli powder turmeric powder coriander powder garam masala powder mix and cook till the oil separates. 5. Add yogurt and mix. Add coriander leaves and chicken and sauté for 1-2 minutes. 6. Add rice chicken stock and adjust salt and mix well. Cover and cook for 20-25 minutes. 7.
