Marinated chicken drumsticks cooked and then tossed in rum sauce.
DRUNK CHICKEN
Ingredients
4-8 chicken drumsticks
½ cup dark rum
1 tablespoon ginger-garlic paste
Crushed black peppercorns to taste
Salt to taste
1-2 sprigs fresh thyme
1½ teaspoons paprika
2 tablespoons brown sugar
1 tablespoon butter
2 tablespoons oil
Method
1. Put chicken drumsticks in a bowl. Add ginger-garlic paste, crushed peppercorns, salt, thyme and 1 teaspoon paprika, mix well and set aside to marinate for 30 minutes.
2. Heat brown sugar in a non-stick pan. Add rum, remaining paprika and butter, mix and let the butter melt.
3. Add salt, stir to mix and bring to a boil. Remove from heat and set aside.
4. Heat oil in another non-stick pan. Add marinated chicken drumsticks, stir, cover and cook till chicken is browned.
5. Add rum sauce, mix, cover and cook till the chicken is fully done.
6. Serve hot.
