Brinjal roundels sandwiched with cheese dipped into gram flour batter and deep fried to make these cripsy pakodas.
BAINGAN PAKORA
Ingredients
1 medium long brinjal (baingan)
1 cup gram flour
200 gms processed cheese
Salt to taste
¼ cup refined flour
½ tsp turmeric powder
1 tsp ginger-garlic paste
1 tbsp sweet red chilli sauce
3 tbsps nylon sev
Oil for deep-frying
Ginger juliennes for garnishing
Spring onion green juliennes for garnishing
Method
1. Cut brinjal into roundels.
2. Using a cookie cutter of the size of the brinjal roundels, cut out cylinder from the cheese and further cut roundels.
3. Sprinkle salt on brinjal roundels.
4. Combine gram flour, salt, refined flour, turmeric powder, ginger-garlic paste, red chilli sauce and 2 tbsps sev in a bowl. Add water as required and mix well into a thick smooth batter.
5. Heat sufficient oil in a kadai.
6. Add remaining sev in the batter and mix well.
7. Place a cheese roundel between two brinjal roundels to make a sandwich. Dip these sandwiches in the batter and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.
8. Garnish with ginger juliennes and spring onion green juliennes and serve hot.
