PESARATTU WITH PANEER
Ingredients
1 cup whole green gram (sabutmoong), soaked
150 grams cottage cheese (paneer)
2 tbsps rice, soaked
2-3 green chillies, broken
7-8 curry leaves
1 inch ginger piece, chopped
Salt to taste
8-10 fresh coriander sprigs
Method
1. Grind moong and rice with little water. Add green chillies, curry leaves and ginger and grind to a coarse paste.
2. Transfer into a bowl, add water to adjust consistency. Add salt and mix well and set aside.
3. Heat a non-stick tawa, pour a ladle full of batter to 4-inch diameter pesarattu.
4. Grate cottage cheese on top of the pesarattu.
5. Chop coriander, spread over cottage cheese and sprinkle salt. Cook till underside golden brown and crisp.
6. Place the pesarattu on a serving plate, grate some more cottage cheese on top and serve immediately.
