A lovely sweet and tart apple pie served in small portions as cookies. APPLE PIE COOKIES Ingredients 2 medium green apples Dough 2 cups refined flour (maida) + for dusting ¼ tsp cinnamon powder A pinch of salt ¼ cup castor sugar ¾ cup cold butter cubes ¼ cup cold water Stuffing 2 tbsps butter 1 lemon ¼ cup brown sugar ¼ tsp cinnamon powder A pinch of nutmeg powder Milk for brushing Method 1. Take refined flour in a bowl. Add cinnamon powder salt castor sugar and whisk well. 2. Add butter and mix well with fingertips till the mixture resembles breadcrumbs. 3. Add cold water and mix till all the ingredients come together. Refrigerate for 1 hour. 4. Peel green apples core and roughly chop them. 5. For stuffing heat butter in a nonstick pan. Add apples zest 1 lemon directly in the pan. Add brown sugar and mix well. Add cinnamon powder nutmeg powder and cook on medium heat for 6-8 minutes or till the apples are pulpy and the mixture is thick. 6. Transfer in a bowl and allow to cool. 7. Preheat the oven at 180ºC. 8. Dust some refined flour on the worktop and roll out the dough into a medium thick disk. Dust some more refined flour on the upper surface as well. 9. Cut roundels with a cookie cutter and cut thin strips from the remaining sheet. 10. Transfer the cut roundels on a baking tray lined with a butter paper. 11. Place a portion of the apple mixture in the centre apply milk on edges and cover with the cut strips Apply milk again and cut out the extra portion. 12. Bake in preheated oven for 15-20 minutes. 13. Allow to cool and serve.
