Kanda Bhajiya
Ingredients
4-5 medium onions, peeled
Salt to taste
1 tsp red chilli powder
1 tsp cumin powder
2 tsp coriander powder
¼ tsp turmeric powder
1 tsp chopped fresh coriander
2 tbsps rice flour
¾ cup gram flour
Oil to deep fry
4-5 green chillies
Vada pav chutney to serve
Method
1. Slice onions thinly and transfer in a bowl. Add salt and mix well. Set aside for 10-12 minutes.
2. Add red chilli powder, cumin powder, coriander powder, turmeric powder, coriander and rice flour and mix well.
3. Add gram flour and mix till all ingredients are well combined.
4. Heat sufficient oil in a kadai
5. Drop small portions of the onion mixture into hot oil and deep fry till golden brown and crisp. Drain on absorbent paper.
6. Slit green chillies and deep fry in the same oil. Transfer on absorbent paper and sprinkle some salt.
7. Serve the bhajiyas hot with fried chillies and vada pav chutney.
