SAOJI MUTTON
Ingredients
750 grams mutton, cut into 2 inch pieces on the bone
3 tbsps oil
2-3 bay leaves
1½ tsps caraway seeds (shahi jeera)
2 tsps coriander seeds
3-4 black peppercorns
2 black cardamoms
1 inch cinnamon stick
2 tsps stone flower
5-6 cloves
3-4 green cardamoms
1½ tbsps poppy seeds
3-4 whole dried red chillies
2 medium onions, sliced
½ cup dry coconut (khopra) slices
1½ tbsps ginger-garlic paste
Salt to taste
Coriander sprig for garnish
Steamed rice to serve
Method
1. Press “saute” button on the Nutripot. Add 2 tbsps oil in it and let it heat up.
2. Add bay leaves, caraway seeds and sauté till the seeds change colour.
3. Add coriander seeds, black peppercorns, black cardamoms, cinnamon stick, stone flower, cloves and green cardamoms. Add poppy seeds, dried red chillies and sauté for a few seconds.
4. Add onions and dry coconut slices and sauté till fragrant and translucent.
5. Press “cancel” on the Nutripot and take the mixture off the heat. Transfer into a blender jar and add ½ cup water and blend till smooth.
6. Press “sauté” button on the Nutripot and add remaining oil and let it heat up.
7. Add ginger-garlic paste and sauté for 1 minute. Add the prepared paste and sauté for 1 minute.
8. Add salt, mix well. Add mutton and sauté for 2 minutes. Add 1 cup water and mix well
9. Add 1 cup water, adjust salt and mix. Press “cancel”, cover and press “mutton curry” button (i.e. for 30 minutes) on the Nutripot.
10. After 5-7 minutes the pressure will be released. Lock the pressure by turning the whistle in left or right direction and let it cook for the remaining time.
11. Once 30 minutes are over, the cooker will go on “Keep Warm” mode, press “Cancel” and let the pressure settle down, open the Nutripot lid.
12. Transfer into a serving bowl, garnish with coriander sprig and serve hot with steamed rice.
