MEAT BALLS – 3 WAYS
Ingredients
Meat balls
400 grams chicken mince
1 tablespoon oil + for shallow-frying
1 tablespoon chopped garlic
1 medium onion, chopped
2-3 fresh rosemary sprigs
1-2 fresh oregano sprigs
1-2 tablespoons dried breadcrumbs
1 tablespoon parmesan cheese powder
Salt to taste
Crushed black peppercorns to taste
Pasta
2 cups boiled penne pasta
1 tablespoon oil
½ tablespoon chopped garlic
½ teaspoon red chilli flakes
1 cup tinned tomatoes
4-5 fresh basil leaves
1 teaspoon dried oregano
Salt to taste
15 grams parmesan cheese + as required
Meat ball sliders
4 mini buns
Few iceberg lettuce leaves
1 medium onion, cut into roundels
2 cheese slices
Meat ball skewers
50 grams cheddar cheese
Method
1. To prepare meat balls, heat 1 tablespoon oil in a non-stick pan. Add garlic and onion and sauté. Add chilli flakes and salt and sauté till onion turns translucent.
2. Finely chop rosemary sprigs and oregano sprigs.
3. Take chicken in a bowl. Add sautéed onion mixture, chopped rosemary, chopped oregano, breadcrumbs, parmesan cheese, salt and crushed peppercorns and mix well.
4. Heat some oil in the same non-stick pan.
5. Divide the mixture into small equal portions and shape into balls.
6. Put the meat balls in the hot oil and shallow-fry on low heat from all sides till golden brown and chicken is done.
7. To prepare marinara sauce for pasta, heat oil in a non-stick pan. Add garlic, chilli flakes, tinned tomatoes and ¼ cup water, mix and cook for 1-2 minutes.
8. Add torn basil leaves and dried oregano, mix and simmer for 2-3 minutes. Put 4-5 tablespoons of sauce in a bowl and reserve.
9. Add some meatballs to the sauce and mix. Add pasta and toss. Add salt and grate in parmesan cheese, mix and cook for 1-2 minutes.
10. Put pasta in a serving bowl, grate some parmesan cheese on top and serve hot.
11. To prepare meat ball sliders, halve the buns horizontally.
12. Place few iceberg lettuce leaves, 1-2 onion roundels and meat balls and put some reserved marinara sauce on the base of the buns halves.
13. Halve the cheese slices, place one halve on each prepared bun, cover with the top bun half and insert one toothpick in the center to seal.
14. To prepare meat ball skewers, cut the cheddar cheese into small cubes.
15. Insert one cheese cube and one meat ball in individual toothpicks and serve hot.
