DARK COOKIE CHURROS
Ingredients
8-10 dark chocolate cookies, crushed
1 cup refined flour
Oil for deep-frying
1 tablespoon castor sugar
¼ teaspoon salt
¼ cup butter
2 eggs
Whipped cream as required
Method
1. Heat sufficient oil in a pan.
2. Heat water in a non-stick pan. Add castor sugar, salt and butter, mix and cook till sugar melts. Add flour and mix till well incorporated.
3. Add eggs and mix well.Add dark chocolate cookies and mix well.Remove from heat and cool.
4. Fill a piping bag fitted with a star nozzle with the flour mixture. Pipe out 3 inch strips/churros directly into hot oil and cut using a scissor. Deep-fry till golden. Drain on absorbent paper.
5. Fill a piping bag with some whipped cream.
6. Make a cavity on the opposite ends of churros using a straw and pipe cream into the cavity.
7. Serve immediately.
