MEXICAN CHICKEN STIR-FRY
Ingredients
2 tablespoons taco seasoning
400 grams boneless chicken breasts, cut into thin strips
1 tablespoon oil
2 medium onions, sliced
� medium red capsicum, cut into strips
� medium yellow capsicum, cut into strips
Salt to taste
Crushed black peppercorns to taste
1 tablespoon soy sauce
� teaspoon cumin powder
1 teaspoon red chilli powder
1 tablespoon lemon juice
1 stalk celery, finely chopped
1 medium tomato, deseeded and cut into strips
Herbed rice for serving
Method
1. Heat oil in a non-stick pan.
2. Take chicken strips in a bowl. Add taco seasoning and mix well.
3. Add onion to the pan and saut� on high heat till translucent. Add marinated chicken strips, mix and cook on high heat for 2 minutes.
4. Add red capsicum and yellow capsicum, mix and cook for 1 minute or till chicken is done. Add salt, crushed peppercorns and soy sauce and mix well.
5. Add cumin powder and chilli powder and mix. Add lemon juice, celery and tomato, mix and cook for 1 minute.
6. Serve hot with herbed rice.
