VEGETABLE MANCHOW SOUP
Ingredients
2-3 spring onion bulbs, diagonally sliced
¼ small cabbage, finely chopped
1 medium carrot, peeled and finely chopped
½ medium green capsicum, finely chopped
1 tablespoon oil
1 tablespoon chopped garlic
1 inch ginger, finely chopped
2 teaspoons chopped green chillies
3-4 button mushrooms, sliced
2-3 dried shiitake mushrooms, soaked for 20 minutes, drained and chopped
3 cups vegetable stock
1 tablespoon red chilli sauce
1 teaspoon dark soy sauce
1 tablespoon cornstarch
Salt to taste
1 tablespoon chopped fresh coriander leaves
Chopped spring onion greens for garnishing
Fried noodles for serving
Method
Heat oil in a deep non-stick pan. Add garlic and ginger and sauté for 1 minute.
Add spring onion bulbs, green chillies, button mushrooms and dried shiitake mushrooms and sauté for 1-2 minutes.
Add cabbage, carrot and capsicum and sauté for 1 minute. Add 3 cups vegetable stock, mix and cook till mixture boil.
Add chilli sauce and soy sauce and mix well.
Mix cornstarch in 1-2 tbsps water in a bowl to make a smooth slurry. Add to pan, mix and cook for 1 minute.
Add salt and coriander leaves, mix and cook for 1-2 minutes.
Garnish with spring onion greens and serve hot with fried noodles.
Preparation Time: 10-15 minutes
