AMERICAN CHOPSUEY
Ingredients
300 grams noodles, boiled
250 grams boneless chicken, cut into strips
1½ tablespoons oil + for shallow-frying
1 inch ginger, finely chopped
1 tablespoon chopped garlic
1 small carrot, cut into thin strips
4-5 French beans, cut into 1 inch pieces
1 medium onion, sliced
Salt to taste
Crushed black peppercorns to taste
1 tablespoon soy sauce
2-3 tablespoons tomato ketchup
1 medium green capsicum, cut into strips
2 teaspoons cornflour
¼ cup bean sprouts
2 eggs
Method
1. Heat some oil in a small non-stick pan. Spread some boiled noodles, reduce heat and shallow-fry from one side for 4-5 minutes. Flip and shallow-fry from the other side till golden brown and crisp.
2. To prepare sauce, heat 1 tablespoon oil in a non-stick pan. Add ginger and garlic and sauté for 1 minute.
3. Add carrot strips, French beans and onion and sauté for 1 minute. Add chicken strips and mix.
4. Add salt and crushed peppercorns, toss well and cook for 1 minute. Add soy sauce and tomato ketchup and mix well.
5. Add 1 cup water, mix and cook on medium heat for 2-3 minutes or till the mixture boils. Add capsicum strips, reduce heat and cook for 1 minute.
6. Take cornflour in a bowl. Add 2 tablespoons water and mix well to make a thick and smooth slurry.
7. Add the slurry little by little to the sauce, mix and cook till the mixture thickens. Add vinegar, salt and bean sprouts, switch off heat and mix well.
8. Place the fried noodles on a serving platter.
9. Heat remaining oil in the same non-stick pan. Break eggs one by one and cook for 2 minutes from the underside. Sprinkle some salt and switch off heat.
10. Put sauce on top of noodles and place cooked eggs on top and serve hot.
