Pahadi Chicken Tikka is delicious when marinated with mint coriander garlic and ginger tenderized with hung yogurt.

PAHADI CHICKEN TIKKA
Ingredients
400 grams chicken leg boneless
10-12 mint leaves
¼ cup coriander leaves
1 inch ginger
4-5 garlic cloves
2 green chillies
½ teaspoon cumin seeds
½ lemon juice + 1 tablespoon
1 tablespoon oil + for greasing
½ teaspoon carom seeds
¼ teaspoon turmeric powder
1½ tablespoons gram flour (besan)
1 tablespoon mustard oil
½ cup hung yogurt
½ teaspoon garam masala powder
¼ teaspoon green cardamom powder
¼ teaspoon fenugreek leaves powder
Butter for basting
Chaat masala for sprinkling
Onion rings for garnishing
Green chutney for serving
Method
1. Add mint coriander ginger garlic green chilli cumin seeds and juice of half lemon in a blender jar along with some water. Grind to a thick and smooth paste. Set aside.
2. Heat oil in a non-stick pan add carom seeds turmeric powder and gram flour mix well. Cook on low heat for two minutes or till the gram flour is fragrant.
3. Empty in a clean bowl and set aside.
4. Heat mustard oil in a non-stick pan till smoking point and allow it to cool set aside.
5. Mix together chicken 1 tbsp lemon juice and salt in a bowl. Set aside.
6. Mix together hung yogurt prepared green paste garam masala green cardamom powder and fenugreek leaves powder mix well.
7. Add the prepared gram flour mixture and mix well. Add smoked mustard oil and mix.
8. Add the marinated chicken to the prepared yogurt mixture and mix well. Set aside for 30 minutes.
9. Add the marinated chicken to the skewer sticks brush them with leftover marinade.
10. Grease a baking tray with some oil transfer the skewer sticks to the baking tray and bake at 200˚C for 15 minutes.
11. Brush butter on top and sprinkle chaat masala.
12. Garnish with onions rings
