SAMOSA PIE Ingredients 1¼ cups refined flour (maida) + for dusting ¼ cup ghee ½ teaspoon carom seeds (ajwain) Salt to taste 2-3 medium potatoes, boiled and peeled 1 inch ginger 1 green chilli 1 tablespoon oil 1 teaspoon cumin seeds 1 teaspoon crushed coriander seeds ¼ teaspoon turmeric powder ¼ cup green peas, boiled ¼ teaspoon chaat masala Juice of ¼ lemon Cherry tomato halves for garnishing Fresh coriander leaves for garnishing Fried green chillies for serving Method 1. Take flour in a bowl. Add ghee and mix till the mixture resembles breadcrumbs. 2. Add carom seeds and salt and mix. Add sufficient water, mix and knead into a stiff dough. Cover the dough with a cling film and refrigerate. 3. Cut potatoes into small pieces. Finely chop ginger and green chilli. 4. Heat oil in a non-stick pan. Add cumin seeds and let them change colour. 5. Add coriander seeds and chopped ginger and green chillies, mix and sauté well. 6. Add turmeric powder and mix well. Add potato pieces and toss well. Add green peas and toss again. 7. Add salt and toss, mash and cook for 2-3 minutes. Add chaat masala and lemon juice and mix well. Transfer the mixture in a bowl and set aside to cool. 8. Preheat oven at 180̊ C. 9. Divide the dough into equal portions. Dust the worktop with some flour, place one portion on it and roll out into a large disc. 10. Line a pie mould with the disc. 11. Dust the worktop with some flour, place the remaining portion on it and roll out into another large disc. 12. Fill the lined mould with the cooked potato mixture. Apply some water on the edges and cover with the disc. Seal the edges and discard the excess dough keeping some of it. Fold in the remaining dough to create a pattern and create a small cross in the centre. 13. Put the mould in the preheated oven and bake for 10-15 minutes. Remove from oven, cool and demould. 14. Cut into wedges, garnish with cherry tomatoes and coriander leaves and serve hot with fried green chillies.
