THAI PRAWNS FRIED RICE
Ingredients
1 tbsp Thai red curry paste
10-15 medium prawns cleaned deveined and washed
3 cups cooked rice
2-3 kafir lime leaves
1 inch lemon grass stalk finely chopped
1 inch galangal sliced
2-3 bird’s eye chillies
2 tbsps oil
1-2 shredded kafir lime leaves
1 spring onion bulb finely chopped
½ small green zucchini finely chopped
½ small red capsicum finely chopped
½ small carrot finely chopped
8-10 button mushrooms finely chopped
1 tsp fish sauce
1 tsp soy sauce
4 tbsps chopped spring onion greens
1 tsp sugar
Salt to taste
1 tbsp toasted white sesame seeds
Method
1. Put kafir lime leaves in a blender jar. Add lemon grass galangal chillies and ½ cup water and blend to a fine paste.
2. Heat oil in a non-stick wok. Add shredded kafir lime leaves and spring onion bulbs and sauté for a minute.
3. Add green zucchini red capsicum and carrot and sauté for 1-2 minutes. Add mushrooms mix and sauté for 2-3 minutes.
4. Add Thai red curry paste and ¼ cup water and mix well. Add fish sauce soy sauce 2 tbsps spring onion greens and prawns and sauté on high heat for 2-3 minutes.
5. Add sugar and salt and mix well. Continue to cook for 1-2 minutes.
6. Add cooked rice and mix till well combined.
7. Add remaining spring onion greens and toasted sesame seeds and mix well.
8. Serve hot garnished with basil sprig.
