MONGOLIAN PRAWNS
Ingredients
16-18 jumbo prawns, cleaned, deveined with tail intact
3-4 garlic cloves, chopped
2 tablespoons red chilli paste
Salt to taste
½ teaspoon white pepper powder
1 tablespoon oil+ to deep-fry
1 inch ginger, chopped
2 tablespoons tomato ketchup
2 teaspoons light soy sauce
1 tablespoon cornflour
1 teaspoon sugar
1 teaspoon malt vinegar
2 stalks spring onion greens, chopped
Method
1. Put prawns in a bowl, add half the garlic, one tablespoon chilli paste, salt and half the white pepper powder and mix well. Set aside to marinate for ten to fifteen minutes.
2. Add cornflour prawns and mix well.
3. Heat oil in a kadai, add the prawns and deep-fry till golden and crisp.
4. To make the sauce, heat oil in a non-stick wok, add remaining garlic and ginger and sauté till garlic turns golden. Add remaining chilli paste and sauté.
5. Add tomato ketchup, fried prawns and soy sauce and toss. Add salt, remaining white pepper powder, sugar and malt vinegar and toss well.
6. Transfer into a serving plate, add spring onion greens and serve hot.
