CHEESE CORN CHOW
Ingredients
2 cups corn kernel puree
30 grams cheddar cheese + as required
4 burger buns
1 tablespoon olive oil
1 tablespoon butter
1 tablespoon chopped garlic
1 medium onion, finely chopped
1 tablespoon refined flour (maida)
½ cup milk
Salt to taste
Crushed black peppercorns to taste
Fresh parsley sprig for garnishing
Method
1. Preheat oven to 180° C.
2. Trim the top of each burger bun and make a cavity in the center.
3. Place the buns on a baking tray. Put the tray into the preheated oven and bake for 10-15 minutes.
4. Heat olive oil and butter in a deep non-stick pan. Add garlic and sauté for 30 seconds. Add onion and sauté till translucent.
5. Add flour and sauté for 1 minute. Add corn kernel puree, mix and cook for 2-3 minutes. Add milk, salt and crushed peppercorns, mix and cook for 1-2 minutes.
6. Strain the soup in another deep non-stick pan and cook for 1-2 minutes. Grate 30 grams cheese, mix and cook till the cheese melts.
7. Pour the soup into the baked buns, grate some cheese on top and serve immediately garnished with a parsley sprig.
