YAKITORI CHICKEN
Ingredients
500 grams boneless chicken breasts, cut into cubes
½ cup sake
2 tablespoons Japanese soy sauce
7-9 button mushrooms
1 medium red bell pepper
4 spring onions with greens
2 tablespoons castor sugar
Salt to taste
Crushed black peppercorns to taste
1 tablespoon oil
Method
1. Heat sake and soy sauce in a non-stick pan and cook till reduced.
2. Halve mushrooms. Deseed ad cut red bell pepper into medium cubes. Halve spring onion bulbs and mushrooms.
3. Add castor sugar, salt and crushed peppercorns to the pan and mix well. Switch off the heat and transfer the yakitori sauce in a bowl.
4. Skewer red bell pepper cube, chicken cube, spring onion bulb and mushroom on satay sticks and repeat the process.Sprinkle salt and crushed black pepper on the prepared skewers.
5. Heat oil in a non-stick grill pan. Place the skewers on it and grill till golden specks appear. Baste with prepared yakitori sauce and grill for a minute.
6. Serve hot with remaining yakitori sauce.
Preparation time: 8-10 minutes
Cooking Time: 10-12 minutes
