CARAMELIZED ONION AND CHEESE PUFF
Ingredients
200 grams puff pastry dough
3 medium onions
100 grams brie cheese
1½ tablespoons oil
Salt to taste
Crushed black peppercorns to taste
1 tablespoon sugar
2-3 fresh rosemary sprigs
Refined flour (maida) for dusting and coating
1½ -2 tablespoons toasted pinenuts
1 egg
Butter for greasing
Fresh parsley leaves for garnishing
Tartar sauce for serving
Method
1. Preheat oven to 180° C.
2. Slice onions.
3. Heat oil in a non-stick pan. Add sliced onions and sauté. Add salt, crushed peppercorns and sauté till onions turns translucent.
4. Add sugar and rosemary leaves, mix and cook till the onions caramelize. Transfer on a plate and cool.
5. Dust the worktop with some flour, roll out the puff pastry dough into a thin sheet and trim the edges to make a rectangle sheet.
6. Coat the knife with some flour and make equal slant cuts on ends of opposite sides of the sheet, leaving the center.
7. Put the caramelized onions in the center and put some toasted pine nuts on top.
8. Cut the brie cheese block small wedges and place on top of pine nuts.
9. Beat an egg in a bowl.
10. Make 1 inch cuts from the 4 corners and discard the excess dough. fold the ends and further fold the slant cuts on the inside alternatively, applying beaten egg.
11. Grease a baking tray with some butter, place the prepared sheet and brush some beaten egg on top.
12. Put the tray into the preheated oven and bake for 15-20 minutes.
13. Garnish with parsley leaves and serve hot with tartar sauce.
