Ultra unique and healthy recipe straight from #MilletKhazana - Chicken Proso Frankie. It's so tasty that all your family members will love it. CHICKEN PROSO FRANKIE Ingredients 1 cup proso millet Salt to taste 1 tsp ghee ¼ cup rice flour + for dusting 2 tsps oil Stuffing 1 tsp ghee 1 medium onion chopped 2 tsps ginger-garlic paste 1 medium tomato chopped Salt to taste 1 tsp red chilli powder ½ tsp turmeric powder 1½ tsps cumin powder 1 tsp coriander powder 1 tsp garam masala powder 2 tbsps coriander 300 gms boneless chicken cut into thin strips Mayonnaise as required Green chutney as required Method 1. To make the roti put the proso millet in a grinder jar. Grind to a fine powder. 2. Heat 1¼ cups water in a deep pan. Add salt ghee and bring it to a boil. Add 1 cup ground powder and rice flour. Mix till well combined. Cover and steam for 1 minute. 3. Take the pan off the heat and transfer into a large plate. Allow to cool slightly. 4. Drizzle oil and knead to a soft dough while the mixture is still warm. Cover with a damp muslin cloth. 5. Dust the worktop with rice flour. Take a portion of the dough and roll it into a ball. Place it over the worktop and roll it into a thin disc. 6. Heat a non-sick tawa place the disc over it and cook for 1-2 minutes. Flip and cook the other side for 1-2 minutes. Apply a little ghee on both sides and continue to cook for a minute. 7. To make the stuffing heat ghee in a pan. Add onion ginger-garlic paste and sauté for 2-3 minutes. 8. Add tomato mix and cook for 1-2 minutes. Add salt red chilli powder turmeric powder cumin powder coriander powder garam masala powder and coriander leaves and sauté for 1-2 minutes. 9. Add the chicken and sauté on high heat for 2-3 minutes. Reduce the heat to medium and continue to cook till the chicken is cooked completely. 10. To make the Frankie take a prepared roti on a worktop. Apply some mayonnaise and green chutney over it. Arrange a portion of the chicken mixture and tightly roll it into a Frankie. Diagonally cut it in half and serve with green chutney.
