CHOCOLATE ORANGE SOUFFLE
Ingredients
1 cup chopped dark chocolate
1 medium orange
1½ cups pastry cream
3 tablespoons butter + for greasing
2 egg yolks
4-5 egg whites
¼ cup castor sugar + for dusting
Icing sugar for dusting
Orange segments for garnishing
Fresh mint sprigs for garnishing
Method
1. Preheat oven to 180° C.
2. Heat some water in a deep non-stick pan. Place a bowl, add dark chocolate and 2 tablespoons butter and cook till it melts, stirring occasionally. Remove from heat and bring down to room temperature.
3. Take pastry cream in a bowl. Grate orange zest and squeeze out the juice of ½ orange and mix well.
4. Add 1 tablespoon butter to the melted dark chocolate and mix well to get a homogenous mixture.
5. Add the pastry cream mixture gradually into the melted chocolate and whisk. Add egg yolks and whisk well.
6. To prepare meringue, take egg whites in a bowl. Add ¼ cup castor sugar and whisk well using an electric beater till medium peaks appear.
7. Add ⅓ of meringue into the chocolate pastry cream mixture and fold. Add remaining meringue and fold well.
8. Grease the individual ramekins with some butter and dust with some castor sugar. Fill them with the pastry cream mixture.
9. Place the prepared ramekins on a baking tray. Put the try into the preheated oven and bake for 10-12 minutes.
10. Dust some icing sugar on top and serve hot garnished with orange segments and mint sprigs.
