OPEN MASALA EGG
Ingredients
4 eggs
1 tablespoon olive oil
2 green chillies, finely chopped
1 tablespoon finely chopped garlic
1 tablespoon grated ginger
2 medium onions, sliced
1 large tomato, finely chopped
1 fresh jalapeno, sliced
8-10 button mushrooms sliced
1 cup shredded spinach
Salt to taste
Crushed black peppercorns to taste
1 tablespoon Schezwan chutney
1 teaspoon chopped fresh coriander leaves
Brown bread slices for serving
Method
1. Heat olive oil in a non-stick pan. Add green chillies, garlic, ginger and onions and sauté till onions are translucent.
2. Add tomato and jalapeno, mix and cook till the tomatoes turn soft and pulpy. Add mushrooms, mix and cook for 1-2 minutes.
3. Add spinach, mix and cook till the leaves wilt. Add salt and crushed peppercorns, mix and cook for 2-3 minutes.
4. Add Schezwan chutney and mix well. Break in eggs, sprinkle crushed peppercorns, salt and coriander leaves, cover and cook till the eggs are fully done.
5. Serve hot with bread slices.
