By the look of it no one can tell that it’s pumpkin. Yes that’s how fun it becomes when batter dipped and fried to golden crispiness.
PUMPKIN FRIES
Ingredients
300 grams red pumpkin peeled and cut into 3 inch thick strips
2 tbsps olive oil
3-4 fresh thyme leaves
Salt to taste
Crushed black peppercorns to taste
½ tsp garlic powder
½ tsp onion powder
1 cup fresh breadcrumbs
Salt to taste
Crushed black peppercorns to taste
½ tsp red chilli flakes
½ tsp dried mixed herbs
Corn flour slurry as required
2 tbsps parmesan cheese powder
1 tbsp chopped fresh parsley leaves
Tomato ketchup to serve
Mayonnaise to serve
Method
1. Preheat the oven at 180°C.
2. Take pumpkin strips in a large bowl. Add olive oil pluck the leaves of thyme and add into the bowl. Add salt crushed black peppercorns garlic powder and onion powder and mix well.
3. Take breadcrumbs in a wide bowl add salt crushed black peppercorns red chilli flakes and dried mixed herbs and mix well.
4. Dip each pumpkin strip in the corn flour slurry and coat with the bread crumbs mixture.
5. Arrange the pumpkin strips on a baking tray and place it in the preheated oven. Bake for 20-25 minutes or till golden and crisp. Transfer into a large bowl add parmesan cheese powder and parsley and toss.
6. Arrange the fries on a serving plate and serve with tomato ketchup and mayonnaise.
