CHICKEN MINI CALZONE
Ingredients
2 grilled boneless chicken breasts
200 grams calzone dough
¼ cup grated cheddar cheese
¼ cup grated mozzarella cheese
¼ cup grated processed cheese
¼ cup pizza sauce
4-6 basil leaves
Refined flour for dusting
Method
1. Preheat oven at 180ºC.
2. Shred chicken using a fork and transfer into a bowl. Add cheddar cheese, mozzarella cheese and processed cheese and mix. Add pizza sauce and mix well. Add torn basil leaves and mix.
3. Dust a worktop with some flour, place the dough and roll out to make a thin sheet. Cut the sheet into roundels using a medium size cookie cutter.
4. Put some chicken mixture on each roundel. Fold and seal the edges to make a calzone shape. Press the folded edges using the back of a fork. Put them onto a baking tray. Place the baking tray in preheated oven and bake for 15-20 minutes
5. Serve hot.
Preparation Time:40-50 minutes
Cooking Time: 15-20 minutes
