JAIN HARYALI PANEER TIKKA
Ingredients
250 grams cottage cheese, cut into 1 inch cubes
½ cup roughly chopped fresh coriander leaves
¼ cup roughly chopped fresh mint leaves
1-2 green chillies, chopped
1 teaspoon dried ginger powder (soonth)
1 teaspoon cumin powder
5 tablespoons oil
2 tablespoons roasted gram flour (bhuna besan)
1 teaspoon lemon juice
5-6 baby corns, sliced diagonally
1 red capsicum, cut into 1 inch cubes
Salt to taste
1 teaspoon chaat masala
Method
1. Put coriander leaves, mint leaves, green chillies, ginger
powder, cumin powder and two tablespoons oil in a mixer jar
and grind coarsely. Transfer into a large bowl and add gram
flour, lemon juice and one tablespoon oil and mix well.
2. Add cottage cheese, baby corns and red capsicum and gently
mix till they are well coated with the ground paste. Set aside to
marinate for twenty to thirty minutes.
3. String cottage cheese, baby corn and red capsicum, one after
other on skewers, keeping little space in between. Keep them
on a plate.
4. Heat two tablespoons oil on a non-stick grill pan, place the
satay sticks on it and cook, rotating the sticks occasionally, till
the cottage cheese is golden brown all around.
5. Place the satay sticks on a serving plate, sprinkle chaat
masala over them and serve hot.
