SAJJIGE ROTI
Ingredients
1½ cups semolina (rawa)
¾ cup scraped fresh coconut
1 medium onion chopped
2 tbsps chopped fresh coriander leaves
1 green chilli chopped
1 tsp cumin seeds
1 tsp sugar
Salt to taste
½ tsp turmeric powder
2 tbsps yogurt
Oil for drizzling
Coconut chutney to serve
Method
1. Take semolina in a large bowl add coconut onion coriander leaves green chilli cumin seeds sugar salt turmeric powder yogurt and ¾ cup water and mix well. Set aside for 10-15 minutes.
2. To make the roti spread a portion of the mixture and shape it into a disc on a non-stick tawa. Place it on heat drizzle oil and cook for 1-2 minutes. Cover and cook for 5-6 minutes on low heat. Flip and cook the other side for 4-5 minutes.
3. Serve hot with coconut chutney.
