METHI MALAI MATAR
Ingredients
2 medium fresh fenugreek leaves (methi), chopped
½ cup fresh cream (malai)
½ cup green peas (matar)
Salt to taste
1 tablespoon oil
1 large onion, finely chopped
2 teaspoons ginger-garlic paste
½ teaspoon dried mango powder (amchur)
1-2 green chillies, chopped
2 tablespoons cashewnut paste
¼ teaspoon garam masala powder + for sprinkling
Method
1. Put fenugreek leaves in a bowl. Add salt, mix and set aside for 30 minutes or till it leaves water. Squeeze out excess water and transfer in a bowl.
2. Mix together oil, onion and ginger-garlic paste in a microwave proof bowl and cook in microwave on high (100%) for 2 minutes.
3. Add fenugreek leaves, mix and cook in microwave on high (100%) for 5 minutes. Add green peas, dried mango powder and green chillies, mix and cook in microwave on high (100%) for 2 minutes.
4. Add cashewnut paste, cream, garam masala powder and salt and mix. Add some water, mix, clover with cling film, prick using a knife and cook in microwave on high (100%) for 5 minutes. Mix well.
5. Sprinkle some garam masala powder and serve hot.
