BATATA VATANA PULAO
Ingredients
1½ cups Basmati rice, soaked for 15-20 minutes and drained
1 medium potato (batata), peeled and cut into small pieces
¼ cup green peas (vatana)
2 -3 tablespoons oil
2-3 cloves
2-3 black peppercorns
½ inch cinnamon
¼ teaspoon asafoetida (hing)
½ teaspoon turmeric powder
2 medium onions, finely chopped
1 medium tomato, finely chopped
1 tablespoon chopped fresh coriander leaves + for garnishing
1 tablespoon ginger-garlic paste
Salt to taste
2 tablespoons scraped fresh coconut + for garnishing
1 tablespoon mixed masala
Method
1. Heat oil in a deep non-stick pan. Add cloves, black peppercorns, cinnamon, asafoetida, turmeric powder, onions, tomatoes, coriander leaves, drained potato, drained green peas and ginger-garlic paste, mix and cook for 1 minute.
2. Add salt and mix. Add 2 tablespoons coconut and rice and mix. Add mixed masala, mix and cook for 1-2 minutes.
3. Add 3 cups water, mix, cover and cook till rice is done.
4. Serve hot garnished with some coriander leaves and coconut.
