Chilled cold creamy souffle made with fresh mangoes. A must try !
COLD MANGO SOUFFLE
Ingredients
¾ cup mango puree
Chopped mangoes for garnishing
2 eggs
½ cup castor sugar
1 tablespoon vanilla essence
1 tablespoon gelatin
Juice of ¼ lemon
Icing sugar for dusting
Fresh mint sprigs for garnishing
Method
1. Separate egg yolks from whites into 2 separate bowls.
2. Cook egg yolks with ¼ cup castor sugar and vanilla essence in a double boiler till smooth.
3. Add gelatin and whisk well. Remove from heat and set aside.
4. Whisk together egg whites and lemon juice. Add remaining castor sugar and whisk till fluffy.
5. Add mango puree to egg yolk mixture and whisk well. Fold in egg white mixture till well incorporated.
6. Cover individual ramekin moulds with parchment paper and pour soufflé mixture into each. Refrigerate overnight.
7. Dust icing sugar on top, garnish with chopped mangoes and mint sprigs and serve immediately.
