We gave you the Classic Hummus and ways to make this Mediterranean speciality with different seasonal and usual vegetables. Now we bring to you yet another variant this time with caramelised onions. A slightly sweetish variant to be served with toasted pita crisps CARAMELISED ONION HUMMUS Ingredients 1½ cups peeled shallots 1½ cups boiled chickpeas 5-6 garlic cloves Crushed black peppercorns to taste Salt to taste 1 tbsp lemon juice 6 tbsps extra virgin olive oil 2 tbsps tahini ¼ cup boiled chickpea water 2-3 fresh thyme sprigs ½ tsp paprika powder ¼ cup brown sugar Finely chopped parsley to sprinkle Pita crisps to serve Method 1. Transfer the chickpeas in a blender jar. Add garlic crushed black peppercorns salt lemon juice 4 tbsps extra virgin olive oil tahini chickpea water and grind to a fine paste. 2. Heat remaining olive oil in a pan. Add shallots and sauté till golden brown. 3. Pluck thyme leaves and add to the pan. Add salt crushed black peppercorns paprika powder and mix well. Cook on medium heat for 2 minutes. 4. Add brown sugar ¼ cup water and mix well. Cook on medium heat for 5-6 minutes. Allow to cool. 5. Transfer the ground chickpea mixture in a serving bowl place the caramelised onion mixture on top. 6. Sprinkle parsley on top and serve with pita crisps.
