RAJMA MASALA
Ingredients
1 cup red kidney beans (rajma), soaked for 6-8 hours and boiled
1 tablespoon oil
1-2 green chillies, finely chopped
½ cup onion-ginger-garlic paste
1 teaspoon cumin powder
1½ teaspoons coriander powder
1 teaspoon red chilli powder
1 cup fresh tomato puree
Salt to taste
1½ cups red kidney bean stock
1 teaspoon garam masala powder
Chopped fresh coriander leaves for garnishing
Method
1. Heat oil in a deep non-stick pan. Add green chillies and onion ginger-garlic paste and sauté till the mixture turns golden brown.
2. Add cumin powder, coriander powder and chilli powder and sauté for 1 minute. Add tomato puree and mix. Add salt, mix and cook till the oil separates.
3. Add red kidney beans and mix. Add red kidney bean stock, mix and cook for 5-7 minutes.
4. Add garam masala powder and mix well.
5. Serve hot garnished with coriander leaves.
