Bored with sooji ka halwa ?? Try this sooji ka halwa with an unusual twist of coarsely ground dates for natural sweetness and an interesting texture.
FRESH DATES HALWA
Ingredients
10-15 fresh red dates seeded and chopped
1 cup semolina (suji/rawa)
4 tbsps ghee
A pinch of salt
2½ cups milk
¾ cup sugar
¼ tsp green cardamom powder
Blanched pistachio slivers as required
Almond slivers for garnish
Method
1. Transfer the dates into a pressure cooker add ¾ cup water mix and cook for 3-4 whistles. Open the cooker once the pressure has reduced completely.
2. Grind the mixture coarsely with a hand blender.
3. Heat a nonstick pan. Dry roast semolina for 6-8 minutes.
4. Heat 3 tbsps ghee in a non-stick pan. Add roasted semolina and mix. Add dates salt mix and cook for a minute.
5. Add milk and mix. Cover and cook till the moisture dries.
6. Add sugar cardamom powder and pistachios mix well cover and cook for 2 minutes.
7. Drizzle 1 tbsp ghee mix well cover and cook for 1 minute.
8. Garnish with some pistachio slivers almond slivers and serve.
