PISTACHIO CRUSTED CHICKEN
Ingredients
1 cup US Pistachios blanched peeled and dried
US Pistachios powder for garnish
4 boneless chicken breasts
Salt to taste
Crushed black peppercorns to taste
1 tsp onion powder
¾ tsp garlic powder
½ tsp dried mixed herbs
1 tbsp Worcestershire sauce
2 tbsps olive oil + for drizzling
2-3 white bread slices edges trimmed
¼ cup fresh parsley sprigs
Mustard paste for applying
Oil for greasing
Saffron mayo to serve
Pistachios powder
Salad to serve
Method
1. Take the chicken breast on a plate sprinkle salt crushed black peppercorns onion powder garlic powder dried mixed herbs Worcestershire sauce and olive oil. Rub the mixture well on the chicken and set it aside to marinate for 10-15 minutes.
2. Preheat the oven at 180ºC.
3. Put the US Pistachios in a food processor jar. Tear bread slices and add along with parsley sprigs and blend to a fine mixture. Transfer this into a shallow wide bowl and spread it evenly.
4. Place the marinated chicken on another plate and brush mustard sauce on all the sides. Coat this with the pistachio mixture till well coated on all sides.
5. Grease a baking tray with some oil. Place the chicken over it and bake it in the preheated oven for 15-20 minutes.
6. Bring the tray out of the oven and gently place the chicken on a worktop. Thickly slice it and arrange it on a serving plate. Garnish with US Pistachios powder drizzle olive oil and serve hot with saffron mayo and salad.
