STIR-FRY CHICKEN WITH LEMON AND CORIANDER
Ingredients
400 grams boneless chicken breasts, cut into ½ inch cubes
Juice of 1 lemon
8-10 fresh coriander sprigs, finely chopped
6-7 garlic cloves, finely chopped
2 fresh red chillies, diagonally sliced
1 tablespoon sesame oil
1 teaspoon soy sauce
Salt to taste
½ teaspoon sugar
White pepper powder to taste
Method
1. Heat sesame oil in a non-stick wok. Add garlic and red chillies and sauté till garlic turns golden brown.
2. Add chicken cubes and toss. Add soy sauce, salt, sugar, pepper powder and coriander leaves, toss and cook on high heat for 2-3 minutes.
3. Reduce heat, add lemon juice, toss and cook on medium heat for 3-4 minutes.
4. Serve hot.
