STEAMED POMFRET WITH LEMONGRASS
Ingredients
2 medium pomfret, heads removed
1 lemongrass
Salt to taste
2tablespoons lemon juice
1 medium stalk celery
5-6 spring onion bulbs
2-3 green chillies
1 inch ginger
1 tablespoon chopped fresh coriander leaves
1 bay leaf
5-6 garlic cloves
1 tablespoon light soy sauce
½ teaspoon lemon zest
1 large carrot, peeled and cut into juliennes
1 teaspoon honey
1 teaspoonsesame seeds
Method
1. Sprinkle some salt and drizzle 1 tablespoon lemon juice on the pomfret and rub well on both sides. Set aside.
2. Roughly chop lemongrass, celery, spring onion bulbs, green chillies and ginger. Place them in a blender jar alongwith chopped coriander, bay leaf, garlic, soy sauce, ½ tablespoon lemon juice, lemon zest and salt. Add water as required and blend into a smooth paste.
3. Apply the paste evenly on both sides of the pomfret. Set aside for half an hour.
4. Steam the pomfret in a Chinese bamboo steamer for 7-8 minutes or till the fish is cooked.
5. To make the salad, place carrot in a bowl. Add remaining lemon juice, salt, honey and sesame seeds and mix well.
6. Place the prepared salad on a serving plate. Put the steamed fish on other side and serve immediately.
Preparation Time: 10-15 minutes
Cooking Time: 7-8 minutes
