Creamy thick soup made with sauteed corn kernels. A must try !
BHUNI MAKAI KA SOUP
Ingredients
2 cups corn kernels (makai)
1 tablespoon olive oil
1 tablespoon butter
4-5 garlic cloves
1 large onion, sliced
4 cups vegetable stock
Salt to taste
Crushed black peppercorns to taste
1 tablespoon chopped fresh coriander leaves
Method
1. Heat oil and butter in a deep non-stick pan. Add garlic and onions, mix and sauté till onions turn golden brown.
2. Add corn kernels and mix. Add vegetable stock and stir to mix. Add salt and crushed peppercorns, mix, cover and simmer till corn kernels are tender.
3. Blend smoothly, strain into another pan on heat and heat.
4. Add coriander leaves, salt and crushed peppercorns, mix well and simmer for 2 minutes.
5. Sprinkle some crushed peppercorns and serve hot.
