PAPETA PAR EEDA (PARSI STYLE POTATO AND EGGS)
Ingredients
2 medium potatoes
8 eggs
2 tbsps oil
1½ tsps cumin seeds
2-3 green chillies finely chopped
1 medium onion chopped
1 medium tomato chopped
Salt to taste
Crushed black peppercorns to taste
4 tsps chopped fresh coriander leaves
Red chilli powder to sprinkle
Toasted bread slices to serve
Tomato ketchup to serve
Method
1. Thinly slice potato and set aside.
2. Heat oil in a non-stick pan add cumin seeds and let them change colour. Add onion mix well and cook till translucent.
3. Add tomato and mix well. Add salt mix and cook till the tomato is soft and pulpy.
4. Arrange potato slices on the onion-tomato mixture and sprinkle a pinch of salt on top. Cover and cook for 1 minute.
5. Break in the eggs in the pan sprinkle a pinch of salt and crushed black peppercorns. Sprinkle chopped coriander cover and cook till the eggs are done.
6. Sprinkle a little red chilli powder on top. Serve hot with toasted bread and tomato ketchup.
