GODA MASALA
Ingredients
½ cup grated dried coconut
1 teaspoon caraway seeds (shahi jeera)
1 teaspoon cumin seeds (jeera)
2 teaspoons oil
½ cup coriander seeds
2 tablespoons white sesame seeds
2 tablespoons niger seeds (karale til)
2-3 tablespoons poppy seeds (khuskhus)
1 stone flower
2 dried red chillies
½ inch dried turmeric, broken
6 cloves
6 green cardamoms
½ inch cinnamon
1 bay leaf
Method
1. Dry-roast dried coconut, caraway seeds and cumin seeds in a non-stick pan till golden brown and fragrant. Transfer in a bowl and cool.
2. Heat 1 teaspoon oil in the same non-stick pan. Add coriander seeds, white sesame seeds and niger seeds and roast till golden brown and fragrant. Transfer in the same bowl and cool.
3. Heat remaining oil in the same non-stick pan. Add poppy seeds, stone flower, dried red chillies, dried turmeric, cloves, green cardamoms, cinnamon and bay leaf and sauté till golden brown and fragrant. Transfer in the same bowl and cool.
4. Grind the roasted ingredients into fine mixture.
5. Store in an air-tight container and use as required.
