SPICED PEACH ICED TEA
Ingredients
1 inch cinnamon stick
2-3 medium peaches peeled and chopped
1 small peach thinly sliced
6-8 tbsps sugar
5-6 tea bags
Ice cubes as required
5-6 lemon slices + to serve
6-8 fresh mint leaves + to serve
1½ tsps lemon juice
Method
1. To make peach jam heat a non-stick pan. Add the chopped peaches 2-3 tbsps sugar and ½ tsp lemon juice and mix well. Cook till the sugar melts.
2. Add ¼ cup water mix and cook till the peach turns soft and pulpy. Take the pan off the heat and allow the jam to cool to room temperature.
3. Bring 4 cups water to a boil in a deep pan. Break the cinnamon stick and add into the water.
4. Add remaining sugar and cook till it melts. Take the pan off the heat and strain the mixture into a jar. Dip the tea bags for a few times or till the flavour is infused well. Discard the tea bag and add ice cubes.
5. Add peach jam lemon slices mint leaves and remaining lemon juice and mix well.
6. Put the ice cubes in serving glasses add some lemon slices some mint leaves a few peach slices and pour the iced over it. Serve immediately.
