HONEY CHILLI POTATOES (Serves - 4)
Ingredients
4 medium potatoes, peeled and cut into fingers
1½ tablespoons honey
1 tablespoon oil + for deep-frying
2 teaspoons garlic paste
1 tablespoon + 1 teaspoon red chilli paste
3 teaspoons red chilli sauce
Crushed black peppercorns to taste
Salt to taste
3-4 tablespoons refined flour (maida)
1 tablespoon chopped garlic
2 spring onion bulbs, sliced
1 teaspoon soy sauce
1 teaspoon red chilli flakes
2 tablespoons sliced spring onion greens + for garnishing
½ teaspoon vinegar
Method
1. Heat sufficient oil in a kadai.
2. Mix together potato fingers, garlic paste, 1 tablespoon red chilli paste, 2 teaspoons red chilli sauce, crushed peppercorns, salt and flour in a bowl.
3. Put marinated potato fingers in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
4. Heat 1 tablespoon oil in a non-stick pan. Add chopped garlic and sauté for 1 minute. Add spring onion bulbs and remaining red chilli paste and mix well.
5. Add remaining red chilli sauce and soy sauce and sauté for 30 seconds. Add fried potato fingers and mix well.
6. Add chilli flakes, crushed peppercorns, salt and 2 tablespoons spring onion greens and toss well. Add honey and vinegar, mix and cook for 1 minute.
7. Serve hot garnished with spring onion greens.
