KURKURI BHINDI
Ingredients
250 grams lady’s finger (bhindi), ends trimmed and cut into thin strips
3-4 tablespoons gram flour (besan)
2-3 tablespoons rice flour
1 teaspoon carom seeds (ajwain)
¼ teaspoon asafoetida (hing)
Salt to taste
Oil for deep-frying
Masala
1 teaspoon chaat masala
1 teaspoon red chilli powder
Salt to taste
Method
1. Mix together lady’s finger, gram flour, rice flour, carom seeds, asafoetida and salt in a bowl.
2. Heat sufficient oil in a kadai.
3. Add 3-4 tablespoons water to lady’s finger mixture and mix till well coated. Add 1 tablespoon hot oil and mix well.
4. Put the coated lady’s finger in hot oil and deep-fry on medium heat till golden brown and crisp. Drain on absorbent paper.
5. To prepare masala, mix together chaat masala, chilli powder and salt in a bowl.
6. Sprinkle some masala on top of fried lady’s finger while still hot and mix well.
7. Put in individual shot glasses and serve hot.
