Ingredients
1 cup sugar
2 cups refined flour + for dusting
Oil for deep-frying
½ cup semolina
2 tablespoons ghee
Salt to taste
Method
1. Heat sufficient oil in a kadai.
2. To prepare sugar syrup, heat sugar in a non-stick pan. Add ½ cup water and cook till sugar melts.
3. Take flour onto a plate. Add semolina and ghee and mix well. Transfer the mixture into an electric whisker. Add salt and mix. Add sugar syrup gradually and mix till well incorporated.
4. Transfer the mixture onto a plate, dust someflour on top and knead into adough. Set aside for 15 minutes.
5. Divide the dough into equal portions. Dust the worktop with some flour and roll out each portion to make a thin sheet.
6. Trim off the edgesand cut the sheet into medium sizediamonds using a serrated wheel cutter.
7. Deep-fry diamonds into hot oil on medium heat till golden and crisp. Drain on absorbent paper and cool.
8. Store.
Preparation Time: 25-30 minutes
Cooking Time: 8-10 minutes
