Healthy and easy to digest delicious recipe - Lauki Vadi ki Sabzi made with bottle gourd and Urad dal wadiyaan together with homely spices is a must try. LAUKI VADI KI SABZI Ingredients 2 cups chopped bottle gourd (lauki) ½ cup dried mangodi 2 tbsps oil 1 tsp cumin seeds 1 tbsp finely chopped ginger 2 green chillies slit 1 medium onion finely chopped 1 large tomato finely chopped ¼ tsp turmeric powder ½ tsp Kashmiri red chilli powder 1 tsp coriander powder ½ tsp cumin powder Salt to taste Garam masala powder for garnish Chopped fresh coriander leaves for garnish Phulkas to serve Method 1. Heat 1 tbsp oil in a non-stick pan. Add the dried moong ki vadi and sauté till golden brown. 2. Heat remaining oil in a pressure cooker. Add cumin seeds and let them change colour. Add ginger green chillies onion and sauté till translucent. 3. Add tomato and mix well. Cook for 1-2 minutes. 4. Add turmeric powder Kashmiri red chilli powder coriander powder cumin powder and salt and mix well. Cook for 1-2 minutes. 5. Add the sautéed moong ki vadi and mix well. Add the bottle gourd and sauté for 1-2 minutes. Add ¼ cup water mix and cook under pressure on medium heat for 1-2 whistles. 6. Open the cooker once the pressure has reduced completely. Transfer into a serving bowl garnish with garam masala powder and coriander leaves and serve hot with phulkas.
