UPVASBATATA BHAJI
Ingredients
4 potatoes (batata), boiled and peeled
1 tablespoon ghee
1-2 green chillies
1 teaspoon cumin seeds
1 tablespoon roasted and crushed peanuts
Salt/rock salt to taste
1 tablespoon fresh scraped coconut
Method
1. Heat ghee in a non-stick pan.
2. Chop green chillies and cut potatoes into cubes.
3. Add cumin seeds to hot ghee and sauté till fragrant. Add chopped chillies and sauté for 30 seconds.
4. Add cubed potatoes and toss to mix. Add peanuts, salt and coconut, toss to mix, cover and cook for 4-5 minutes on low heat.
5. Serve hot.
Preparation time: 3-5 minutes
Cooking Time: 12-15 minutes
