Momos stuffed with chicken mince mixture tossed in chilli garlic sauce.
CHILLI GARLIC MOMOS
Ingredients
150 grams chicken mince
200 grams refined flour (maida) dough
1 tablespoon garlic paste
1½ tablespoons chopped fresh coriander leaves
2 tablespoons soy sauce
1 tablespoon ginger-garlic paste
Salt to taste
White pepper powder to taste
1 tablespoon oil
2-3 spring onion bulbs, sliced
3 tablespoons tomato ketchup
1½ tablespoons Schezwan sauce
3 tablespoons chicken stock
Sliced spring onion greens for garnishing
Method
1. Mix together chicken mince, 1 tablespoon coriander leaves, 1 tablespoon soy sauce, ginger-garlic paste, salt and pepper powder in a bowl.
2. Roll out dough into a large disc. Using a medium size cookie cutter, cut out discs from it.
3. Place a spoonful of chicken mixture in the centre and shape into momos.
4. Heat oil in a non-stick pan. Add spring onion bulbs and garlic paste, mix well and sauté till onions turns translucent.
5. Add tomato ketchup and mix well. Add Schezwan sauce and mix. Add remaining soy sauce and chicken stock, mix and bring to a boil.
6. Add salt and pepper powder, mix well and simmer for a minute. Add remaining coriander leaves and stir to mix.
7. Add momos, mix lightly and cook for 3-4 minutes.
8. Garnish with spring onion greens and serve hot.
