BAINGAN KA CHOKHA
Ingredients
1 large green brinjal (baingan)
3-4 garlic cloves
2 medium tomatoes
1 medium onion finely chopped
2 green chilli chopped
3 tbsps chopped fresh coriander leaves
Salt to taste
2 tbsps mustard oil
Method
1. Make a few slits on the baingan insert a garlic clove into each slit.
2. Heat a wire rack on direct flame place the baingan and tomatoes over it and roast rotating in between till well charred from all sides.
3. Place the roasted baingan and tomatoes on a worktop peel trim the tops and finely chop them along with the roasted garlic cloves. Transfer in a bowl add onion green chilli coriander leave salt and mustard oil and mix till well combined.
4. Transfer into a serving bowl and serve.
