TOMATO OMELETTE SANDWICH
Ingredients
8 white bread slices
1 large tomatoes, finely chopped
1½ cups gram flour (besan)
1 medium onion, finely chopped
1 teaspoon red chilli powder
¼ teaspoon turmeric powder
¼ teaspoon dried mango powder (amchur)
Salt to taste
1-2 green chillies, finely chopped
Oil as required
Butter as required
Green chutney as required
Tomato ketchup as required
Few iceberg lettuce leaves
Method
1. Mix together gram flour, tomato, onion, chilli powder, turmeric powder, dried mango powder, salt and green chillies in a bowl. Add some water and mix to make a semi-thick mixture.
2. To prepare one tomato omelette, heat 2 teaspoons oil in a non-stick pan. Pour a large ladleful of tomato-gram flour mixture, spread to make a thick disc and cook form both sides till golden brown. Transfer on a plate.
3. Cut each tomato omelette into 4 equal pieces.
4. To prepare one sandwich, apply some butter on one side of two bread slices. Apple some green chutney on one bread slice and some tomato ketchup on another bread slice.
5. Place few torn lettuce leaves and 2 tomato omelette pieces on top of bread slice with tomato ketchup on top and cover with another bread slice with green chutney downside. Cut into 2 equal triangle.
6. Serve hot with tomato ketchup and green chutney.
