GOAN MUSSEL PULAO
Ingredients
½ cup mussels, shelled
1½ cups rice, soaked for an hour
2 tablespoons oil
½ inch cinnamon
3-4 cloves
4-5 black peppercorns
1 medium onion, chopped
1 tablespoon garlic-ginger-green chilli paste
½ teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon Sundaymasala
1 medium tomato, chopped
Salt to taste
1 tablespoon chopped fresh coriander leaves
Method
1. Heat oil in a non-stick pan. Add cinnamon, cloves and peppercorns and sauté for a minute. Add onion, mix and sauté for a minute.
2. Add ginger-garlic-green chilli paste, mix and cook for a 30 seconds. Add rice, mix and cook for a minute.
3. Add mussels, mix and sauté for a minute. Reduce heat, add turmeric powder, chilli powder and Sundaymasala and mix well.
4. Add tomato and mix well. Add salt, mix and cook on high heat for 30 seconds. Add 3 cups hot water, mix, cover and cook for 8-10 minutes. Add chopped coriander and mix well.
5. Serve hot garnished with a mint sprig and lemon slice.
Preparation time: 60-65 minutes
Cooking time: 15-20 minutes
