TOMATO SAAR Ingredients 4 tomatoes 2 tbsps scraped fresh coconut Salt to taste ¼ tsp sugar ¼ tsp crushed black peppercorns 1 tbsp ghee 1 tsp cumin seeds 2-3 green chillies broken 1 tbsp chopped fresh coriander leaves Method 1. Trim the eye of the tomatoes and quarter them. Transfer into a pressure cooker add ¾ cup water cover and pressure cook for 3-4 whistles. 2. Open the cooker once the pressure has reduced completely. Transfer into a blender jar add coconut and blend to a fine puree. 3. Strain the blended puree in a large bowl add 1 cup water and mix. Add salt sugar and crushed black peppercorns mix and set aside. 4. Heat ghee in a deep pan add cumin seeds and let them change colour. Add green chillies and sauté for a few seconds. Add the strained tomato mixture mix and cook till it comes to a boil. 5. Add coriander leaves switch the heat off cover and transfer into a serving bowl. Serve hot.
